What the Firk?!?!?!
Yesterday, we tapped our first ever cask-conditioned ale! We dry-hopped our Irish Red with cascade hops and left it in the pin for about 2 weeks. The result was a creamy, smooth traditional English Pub Style ale served room temperature with pronounced toffee and caramel notes that are complimented by slight, enjoyable hop bitterness.
Our Irish Red, which should hit the taps this week, is a fan favorite on regular CO2 draught but this is a whole new way to experience it. We also have a Yonkers Stout in a couple firkins that we will be tapping soon. We will also be sending a few of these cask-conditioned beauties to some bars around the Hudson Valley and New York City, so be on the lookout.
